Romanian Mici

Mici (meech) are the a popular Romanian outdoor food. “Mici” are caseless sausages, made of ground beef meat mixed with spices, garlic, and beef broth.

Big, bold, bramble fruits with hints of cherry and a good structure, this is a match made in heaven.

Recipe

  • INGREDIENTS
  • 200g beef mince
  • 200g pork mince
  • 100ml beef stock
  • 30ml beer
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 2 cloves garlic
  • 1/2 tsp thyme (dry or fresh)
  • 1 pinch nutmeg
  • 1/4 tsp ground coriander
  • 1/4 tsp ground cumin
  • 1/4 tsp cayanne pepper or chilli flakes
  • Baby leaf spinach for serving
  • pepper for seasoning
  • Mix the minced meat in a bowl.
  • Mix the beer, stock, spices and seasoning in another bowl until the salt has dissolved.
  • Add the liquid mix to the meat and give it a really good mix, almost kneading it to a paste.
  • Use a little oil on your hands and shape into mini sausages, about 2cm in diameter and 10cm in length.
  • Place them on a tray and refrigerate for a few hours, overnight even.
  • To cook, BBQ!  Over a high heat for no more than 4 minutes.  You want them caramelised on the outside and juicy inside.
  • Serve wrapped in a leaf of spinach with a glass of wine.
