Amarone wines have a prolonged production technique. The grapes are left to ripen on the vine for considerably longer than most wines. They shrivel and become almost like raisins on the vine before being picked and then further dried on beds of straw.
Only then does the fermentation process commence. The outcome is a highly intense ‘raisin’ character. Some compare it to the intensity of a light port. This is not a fortified wine though. With a hint of coffee and chocolate spice and slightly porty flavours, this wine has medium intensity and balance – very, very approachable.
