Honeyed peaches on the nose with a real surprise on the palate. Domaine Christian Binner harvest their fruit in October and you can taste that extra ripeness whilst still enjoying a deliciously dry wine. The is a real stunner that has to be tasted to be believed.
The vines are on average 35 years old and 60% of them are over 60 years old. The Binner family have just 6 hectares under vine and their yields are extremely low. Only natural yeasts used, the wine is aged in 100 year old oak barrels on its lees and is unfiltered before bottling, so expect a touch of sediment. We tasted this recently
with fresh shrimp and salmon. The exceptional characteristics were the intense yellow, golden colour and the deliciously pungent, ripe peach with honeyed overtones. The flavours are sensational and extraordinarily well developed in spite of its relatively young age. Just goes to show that even just a few years in bottle makes a big difference to the expressiveness of many wines.
