A delicate goats cheese – no too goaty!
It all started as 3 friends on a shoestring budget in the early 1980s. ‘Our goal isn’t to make wines that impress wine critics but wines that express our great terroir’. Giusto Occhipinti (one of the 3) has a passion for experimenting and refining his process to get the most out of his wines. (check out his niece Arianna Occhipinti’s superb Biodynamic wines). This wine is bright red with fresh floral notes. You get raspberries and cherry and lovely juicy fruit with very soft (or no) tannins. All of the Cos wines are produced following entirely biodynamic principles.
