Thibert uses 60 year old vines and ages his wine in French barrels for up to a year before bottling and release.
With a mere 17 hectares to play with, volumes are small, made even smaller by the Thiberts sticking to organic principles where they can.
An attractive lemony yellow colour, good balance of mineral and soft melon flavour, this wine has a super acidity that will ensure good ageing for several years.
