Tinned Sardines Two Ways

When in Portugal…!  Quick and simple and a delicious nibble alongside these two stunning wines.

There’s more to Portugal than Port but when it comes to Sardines you can’t beat ’em!

Recipe

  • INGREDIENTS
  • Tin of top quality Sardinhas – or two
  • Cucumber and Avocado version
  • 1 ripe avocado
  • Half cucumber thinly sliced
  • 1 tbsp soy sauce
  • A sprinkling of sesame seeds
  • 1 spring onion- green part thinly sliced
  • Siracha sauce – if you like a little heat (tabasco would do)
  • Cheese and Horseradish version
  • Seedy, sliced bread – toasted
  • Around 100g extra mature Cheddar
  • 1 tbsp creamy horseradish sauce
  • Fresh chives

Version 1:

  • In a bowl combine the diced avocado, diced cucumber and spring onions.  Add the Siracha sauce (if using) and the soy and combine.
  • Take a 3cm square of toast and flake over some sardine.
  • Add a teaspoon of the avocado mix.
  • Garnish with a sprinkle of sesame seeds.
Bom apetite!

Version 2:

  • Take a 3cm square of toast and place a slice of cheddar on top.
  • Flake over some sardine.
  • Add a dollop of horseradish sauce
  • Garnish with a sprinkle of chopped chives.
Pour a glass of wine and enjoy.
