Vietnamese/Oregon Chicken Wings

Apparently when you go to Portland Oregon you have to go to Pok Pok and order the chicken wings…

This ‘Big Time’ red blend can take some big flavours.  These chicken wings are delicious and make a great pre-dinner snack.

Recipe

  • INGREDIENTS
  • 500g – 1kg chicken wings
  • 8 cloves of garlic – minced
  • 60ml fish sauce
  • 60g sugar
  • 1/2 tsp ground black pepper
  • 1 tbsp chopped coriander
  • 1 tbsp crushed peanuts
  • Mix the garlic, fish sauce, sugar and pepper together in a bowl.
  • Combine the chicken wings with the mixture and marinade – ideally overnight or a minimum of 2 hours.
  • Heat the oven to 180.
  • Remove the chicken wings and roast on a lined baking tray for around 30 minutes in total (depending on the size of your wings).
  • Once the wings are in the oven pour the marinade into a saucepan and reduce by half.  If you need more liquid just boost it up with fish sauce and sugar and a little soy.
  • After 20 mins open the oven and pour over the glaze.
  • Serve sprinkled with crushed peanuts and coriander (or spring onion).

Eat hot and wash down with a glass of Evolution.
